Soon in just a few days will be
summer break and it will seem like
it is always the weekend.
Happy, Happy, Happy.
I love the break, after a year of
schedules and homework negotiations.
Though I still have myself to negotiate
with regarding my school work.
I like to play it like this...
"Okay you can go and have coffee with your
friends as soon as you read 10 pages and
write 5 pages of notes."
"If you don't study for your exam
you can not make any cupcakes for a week!"
My kid has it so easy, at least he will
be able to enjoy his summer without
any deadlines hovering over his head.
At the rate Mother Nature is behaving
it sure does not feel like summer.
Windy, rainy, cloudy is the theme.
I long for a sunbeam to stand in.
It's almost hard to justify making
But since they are the cocktail
type it must be done.
It just would be so much nicer
to enjoy them while sitting out
on my patio in the heat instead of under
a blanket staring out the window.
I am sure if I eat enough of these
popsicles I won't even care
what the weather is doing or
what assignment I am behind in.

PINA COLADA POPSICLES : makes about 2 cups
1 1/2 cup fresh pineapple chopped
8 oz coconut cream ( unsweetened )
* try to use only the cream part*
2 oz white rum
2 oz coconut rum
1 tablespoon agave syrup (optional )
Set aside a few small pieces of pineapple.
In a blender or food processor ( preferred )
add the fresh pineapple, pulse to blend slightly.
Add the coconut cream, rum and agave syrup.
Pour mixture 1/2 way into molds.
Drop in a couple of pieces of pineapple that
were set aside, then top with cocktail mixture.
Place in freezer and chill until ready.
** toast some shredded coconut to dip
popsicles in before serving. **
