St. Paddy's Cakes




Paddy cake , paddy cake, baker's man
Bake me a cake with beer as fast as you can.
Roll it, pat it, mark it with a B, ( for Beer)
Put it in the oven for my friends and me
.

Okay that wasn't in the original song
but consider it a nursery rhyme for adults.

Cake with beer??
Sign me up!

I have not really given St. Patricks Day
much attention, but I have to say
there are some great things that have
come from the Irish.


Claddagh ring. A traditional Irish ring given as
a token of friendship, love or marriage
My husband gave me one of these when
we first met. Sadly, I lost it somehow over the years.

Irish whiskey. My first taste of this was
given to me at a way too young of age by a relative.
Harsh.
I have since then learned to enjoy it
.......maybe a little too much.

Of course we can't forget the famous
writers and poets like;
C. S. Lewis, James Joyce and Oscar Wilde.

And lastly, today's special ingredient,
STOUT.
I. Love. It.
Especially the chocolate kind.

I know this recipe is similar to the well known
Irish Car Bomb.
And there are a lot of cupcakes
going on out there.
But I like this idea of again using my
New England Bun Pan.

But go ahead and make these into cupcakes,
Bundt cake or use a large loaf pan
and make 2 inch slices, that have been
also sliced through the middle.

Any style or shape won't affect the
wonderful deep, slightly bitter taste of this cake.
Paired with Irish Cream Frosting.

And on a side note;
The recipe does not use all of the beer
so it would be a TERRIBLE waste if you did
not drink it .

Terrible, I say.









St. Paddy's Cakes:


Preheat oven 350 F
Grease pan or line cupcake pan.


Cake:


1 box vanilla cake mix ( I used Betty Crocker )
3 large eggs
1/2 cup sour cream
1/4 cup canola oil
1 cup chocolate stout ( I used Young's Double Chocolate )
1/4 cup cocoa
1 teaspoon vanilla


In a large bowl dump everything in. No need for
step by step.
Beat well until completely combined and smooth.
Pour into prepared pan.
Bake for 35 minutes or until done.
(Maybe 25 minutes for cupcakes)
Remove from oven and let cool for 20 minutes.
Remove from pan and cool completely.

Irish Cream Frosting:

4 cups icing sugar
1/4 cup unsalted butter
1/2 cup cream cheese (from a block)
4 Tablespoons Irish Cream

Blend butter and cream cheese together until light
and fluffy.
Mix in icing sugar.
Add Irish Cream and beat until smooth.
Might need a little more if too stiff.

Frost cake any which way depending on pan shape. Decorate with
green sprinkles and/or candy

**I highly recommend buying a New England Bun Pan.
   I ordered mine from amazon.com.
